Ingredients to make Grilled Mango Tilapia Recipe
4 fillets of Tilapia
4 Serrano chilies, seeded
2 cups mango, peeled and chopped
2 shallots, peeled
3 tsp garlic, minced
1/3 cup cider vinegar
1/4 cup fresh orange juice
1 tbsp thyme, fresh and chopped
2 tsp olive oil
1/4 tsp salt
vegetable cooking spray
Directions to make Grilled Mango Tilapia Recipe
Put the shallots, garlic, and chilies in a food processor and run it until all the ingredients are minced. Then add the olive oil, thyme, orange juice, vinegar, mango, and salt and process until it becomes a smooth consistency. Then place the fish covered with the mango mixture in a covered dish, and refrigerate in order to marinate it for about 20 minutes.
Then, remove the fish, reserving the marinade. Put the marinade into a saucepan and bring it to a boil, then reducing the heat, simmer for about five minutes, and then remove from the heat.
Next, prepare the broiler or grill, and place the fish in the broiler pan or on the grill rack, which has been coated with the vegetable cooking spray. Cook the fish for about four minutes on each side. Serve the fish with the mango sauce.
